1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional for extra heat)

1 cup cooked jasmine rice or brown rice

2 cups mixed greens (spinach, arugula, or romaine)

1 avocado, sliced

½ cup shredded carrots

¼ cup green onions, chopped

½ cup radishes, thinly sliced

½ cup Bang Bang sauce (1/2 cup mayonnaise, 2 tablespoons sweet chili sauce, 1 tablespoon Sriracha)

Instructions
 

Marinate the Chicken: In a bowl, soak the chicken thighs in buttermilk for at least 30 minutes (or up to 4 hours for best results).

    Prepare the Coating: In a shallow dish, mix flour, garlic powder, paprika, salt, black pepper, and cayenne pepper.

      Coat the Chicken: Remove chicken from buttermilk, allowing excess to drip off, then dredge each piece in the flour mixture, ensuring a good coating. Shake off any excess flour.

        Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in batches for about 5-7 minutes per side, or until golden brown and cooked through. Use a meat thermometer to check that the internal temperature reaches 165°F. Transfer to a paper towel-lined plate to drain.
