Ingredients

200g (7 oz) feta cheese, block

300g (10.5 oz) cherry tomatoes, halved

3 cloves garlic, minced

100ml (3.4 fl oz) extra virgin olive oil

300g (10.5 oz) pasta (penne or rigatoni work well)

Salt and pepper to taste

1 teaspoon dried oregano

Fresh basil leaves, for garnish

Crushed red pepper flakes (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baking Dish: In a large baking dish, combine the halved cherry tomatoes, minced garlic, olive oil, dried oregano, salt, and pepper. Mix well.

Add Feta Cheese: Place the block of feta cheese in the center of the baking dish, making sure it’s surrounded by the tomato mixture.

Bake the Ingredients: Bake in the preheated oven for about 30-35 minutes, or until the feta is soft and creamy, and the tomatoes are blistered.

Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.

Combine Pasta and Sauce: Once the baking dish comes out of the oven, use a fork to smash the feta cheese and mix it with the tomatoes, creating a creamy sauce. Add the cooked pasta to the dish and stir until well coated.

Garnish and Serve: Serve hot, garnished with fresh basil leaves and a sprinkle of crushed red pepper flakes for a kick.
