1 cup all-purpose flour

1/2 cup water

1/4 tsp salt

1/2 lb ground pork or chicken

2 green onions, finely chopped

1 tbsp soy sauce

1 tsp sesame oil

1 tsp ginger, minced

1 garlic clove, minced

1 tsp chili paste (adjust for heat preference)

For the Soup:

6 cups chicken or vegetable broth

2 tbsp soy sauce

1 tsp chili oil (for extra spice)

1 tsp garlic, minced

1 tsp ginger, minced

2 cups bok choy, chopped (or any leafy greens)

1 cup mushrooms, sliced (shiitake or button)

Fresh cilantro for garnish

Lime wedges for serving

Make the Dumpling Dough: In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring until the dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and set aside.

    Prepare the Filling: In another bowl, mix the ground pork (or chicken) with green onions, soy sauce, sesame oil, ginger, garlic, and chili paste until well combined.

      Form the Dumplings: Divide the dough into small pieces (about 24). Roll each piece into a thin circle (about 3 inches in diameter). Place a teaspoon of filling in the center of each circle, fold the dough over to create a half-moon shape, and pinch the edges to seal tightly.
