Authentic German Potato Pancakes

4 medium-sized potatoes (Yukon Gold or Russet)

1 medium onion, finely grated

2 large eggs

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon ground black pepper

1/4 teaspoon baking powder

Oil for frying (vegetable or canola)

Applesauce or sour cream for serving (optional)

Prep the Potatoes: Peel the potatoes and grate them using a box grater or a food processor. After grating, place the potatoes in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for achieving a crispy texture.

    Combine Ingredients: In a large mixing bowl, combine the grated potatoes, grated onion, eggs, flour, salt, black pepper, and baking powder. Mix well until all ingredients are thoroughly combined.

      Heat the Oil: In a large skillet or frying pan, heat about 1/4 inch of oil over medium-high heat until shimmering.

        Form the Pancakes: Using a tablespoon or your hands, scoop a portion of the potato mixture and flatten it slightly to form a pancake. Repeat this until you have several pancakes ready to cook.

          Fry the Pancakes: Once the oil is hot, carefully place the pancakes into the skillet, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

            Drain Excess Oil: Once cooked, remove the pancakes from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
