Asian-Style Ground Beef Lettuce Wraps

Ingredients
  

1 lb ground beef (preferably 80/20 for flavor)

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup red bell pepper, finely diced

1/4 cup carrot, finely grated

1/4 cup green onions, chopped (plus extra for garnish)

1/4 cup soy sauce (low sodium recommended)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper to taste

1 head of butter lettuce or iceberg lettuce (for wraps)

Optional toppings: chopped cilantro, chopped peanuts, and lime wedges

Instructions
 

Cook the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: Stir in the minced garlic and ginger. Cook for about 1 minute until fragrant.

      Veggies & Sauces: Add the red bell pepper, grated carrot, and green onions into the skillet. Stir-fry for an additional 2-3 minutes. Then, pour in the soy sauce, hoisin sauce, rice vinegar, sesame oil, and crushed red pepper flakes. Mix well. Let it simmer for 2-3 minutes, allowing the flavors to meld together.

        Taste & Season: Taste and adjust seasoning with salt and pepper as desired. If you like it spicier, add more crushed red pepper flakes.

          Prepare the Lettuce Wraps: While the beef mixture cooks, carefully separate the lettuce leaves and rinse them under cold water. Pat dry with a kitchen towel or paper towel.

            Assemble and Serve: To serve, spoon a generous amount of the ground beef mixture into a lettuce leaf. Top with fresh cilantro, chopped peanuts, and a squeeze of lime if desired. Roll or fold the leaf over the filling and enjoy!
