2 medium apples (preferably Granny Smith), peeled, cored, and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

2 tablespoons unsalted butter, melted

Oil, for frying

1/2 cup powdered sugar (for dusting)

Extra ground cinnamon (for dusting)

Prepare the Apples: In a bowl, add the diced apples along with a sprinkle of cinnamon and sugar. Toss to coat and set aside to marinate for about 10 minutes.

    Make the Batter: In a mixing bowl, combine the flour, granulated sugar, baking powder, ground cinnamon, and salt. In another bowl, whisk together the milk, egg, vanilla extract, and melted butter. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

      Fold in Apples: Gently fold the marinated apples into the batter until evenly distributed.
