2 medium zucchinis, sliced into ½-inch rounds

2 medium yellow squashes, sliced into ½-inch rounds

1 cup breadcrumbs (panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 large eggs, beaten

2 tablespoons olive oil

Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes.

    Prepare the Breading: In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well to combine.

      Prepare the Squash: In another bowl, beat the eggs. Dip each slice of zucchini and yellow squash into the beaten eggs, ensuring they are fully coated, then press them into the breadcrumb mixture, evenly coating both sides.

        Drizzle with Olive Oil: Once all the squash slices are coated, drizzle them lightly with olive oil to help them crisp up in the air fryer.
