8 oz spaghetti or your favorite pasta

2 cups fresh spinach, washed and chopped

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

1/4 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

      Add Spinach: Add the chopped spinach to the skillet, stirring gently until wilted, about 2-3 minutes.
