200g udon noodles

2 tablespoons chili oil

1 tablespoon soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon ginger, grated

1 green onion, thinly sliced

1 small carrot, julienned

1 tablespoon toasted sesame seeds

Fresh cilantro, for garnish (optional)

Salt, to taste

Cook the Udon Noodles: In a pot of boiling water, cook the udon noodles according to package instructions (usually around 6-8 minutes). Once cooked, drain and rinse under cold water to stop the cooking process.

    Prepare the Sauce: In a large bowl, combine the chili oil, soy sauce, sesame oil, minced garlic, and grated ginger. Mix well to create the sauce.

      Sauté the Vegetables: In a large skillet or wok, heat a small amount of oil over medium heat. Add the julienned carrot and sliced green onion, sautéing for about 2-3 minutes until just tender.
